This research aims to provide an innovation in product development for Micro, Small, and Medium Enterprises (MSMEs), particularly in the food sector, by leveraging the potential of Nanggela Village. Nanggela Village's potential lies in its numerous MSMEs in the food sector, one of which is papaya. Papaya has high economic value, making it a significant opportunity for innovation that can attract attention in product development. This innovation transforms the typically sweet and fresh taste of papaya into a savory and crunchy papaya. This research used a descriptive qualitative method, conducting outreach and training on making crispy papaya products as an MSME product innovation for Nanggela Village. Furthermore, crispy papaya products are unique and widely accepted by various groups due to their delicious taste and abundant nutrition. Innovation in product processing is crucial for developing products that are competitive among MSMEs.
